Apple Cinnamon Porridge with Fresh Oat Flakes: A Cosy Autumn Breakfast from Salzburg

When the morning mist settles over the meadows around Hallein and the air smells of damp leaves, we know it’s apple season. On mornings like these, there’s a warm apple cinnamon porridge made with freshly rolled oats on our table at home. It’s quick, it warms you from the inside, and it smells so wonderfully of cinnamon that even the sleepiest family members get up without complaint.

In this post we share our favourite recipe, explain why fresh oat flakes taste so much better, and give you a few ideas to make your porridge a little different every time, including for kids.

Apple season in the Salzburg countryside

In autumn our trees are heavy with fruit. In gardens and traditional meadow orchards across the Salzburg region, apples are now being picked, stored in crates, pressed into cider, cooked into compote or simply eaten straight from the tree. If you have an apple tree yourself, you know the feeling: at some point you just don’t know what to do with them all. Our tip: put them in your breakfast!

Varieties that soften nicely when warmed and bring a little tartness work especially well, such as Bramley-style cooking apples, Boskoop or Topaz. But really, just use the apples you have. A sweet apple needs less honey, a tart one adds freshness to the bowl.

Why fresh oat flakes taste nuttier

Shop-bought oats are usually steamed, rolled and then often stored for weeks or months. When you flake your oats yourself right before breakfast, the whole grain has only been open for a few minutes. You’ll notice it straight away: fresh flakes smell slightly nutty, have a fuller flavour and a pleasant bite.

Flaking also keeps the whole grain intact, germ and outer layers included. Oats naturally contain fibre, including beta-glucan, as well as protein and minerals, so a whole grain oat breakfast can keep you feeling full for a good while.

How to flake your oats fresh

  • The right grain: Hulless (naked) oats are ideal. They grow without tightly attached husks, so you can flake them directly.
  • Flake just enough: Put the grains in your Salzburg flaker and roll only what you need. For two servings that’s about 80 g.
  • Use them straight away: Fresh flakes taste best when they go straight into the pan.
  • Little tip: Try mixing in some spelt or rye flakes for a heartier porridge.

Recipe: apple cinnamon porridge for 2

Ingredients

  • 80 g freshly rolled oat flakes (from hulless oats)
  • 250 ml milk (or oat or almond drink)
  • 150 ml water
  • 1 pinch of salt
  • 1 large apple
  • 1 tsp butter
  • ½ to 1 tsp ground cinnamon
  • 1–2 tsp honey or maple syrup
  • 1 small handful of walnuts

Method

  1. Prepare the apple: Wash, core and cut the apple into small cubes or thin slices. You can leave the skin on.
  2. Caramelise: Melt the butter in a small frying pan, add the apple with a pinch of cinnamon and cook over medium heat for 3–4 minutes until soft and golden. Add half a teaspoon of honey if you like.
  3. Cook the porridge: Bring the milk, water and salt to the boil. Stir in the fresh oat flakes, lower the heat and simmer for about 5 minutes, stirring now and then, until creamy.
  4. Finish: Stir in the rest of the cinnamon and about half of the apple. If it’s too thick, add a splash of milk.
  5. Serve: Divide between two bowls, top with the remaining apple and roughly chopped walnuts, and drizzle with a little honey.

Your warm autumn breakfast is ready in just over ten minutes!

Ideas and variations

  • Toasted nuts: Toast walnuts or hazelnuts briefly in a dry pan for an even deeper flavour.
  • Baked-apple style: Cook a few raisins and a pinch of vanilla with the apples. It tastes almost like a baked apple from Grandma’s oven.
  • With pear: Use a ripe pear instead of the apple, or half and half.
  • From the pantry: If you’ve just made apple compote, use two or three spoonfuls instead of the fried apples.
  • Overnight: Soak the fresh flakes in the milk overnight, then just warm them up in the morning.

Apple porridge for kids

Children love this porridge most when they get to help. Let them wash the apples, sprinkle the cinnamon or turn the flaker to make their own oats. It’s fun, and they see exactly what their breakfast is made of. For kids you can skip or reduce the honey, as the fried apples already add natural sweetness. For little ones, use finely ground nuts rather than whole pieces.

A breakfast that tastes of autumn

For us, a steaming bowl of porridge is simply part of autumn: colourful leaves outside, the scent of cinnamon and apples inside, and everyone gathered around the kitchen table. Give it a try, and if you like, tell us which apples you love to use.

With your Salzburg flaker, your oat flakes are fresh on the table in moments every morning, just as we do it here in Salzburg. And if you’d rather bake at the weekend, your Salzburg grain mill will grind the flour for apple cake or apple strudel too. We wish you a golden autumn and enjoy your breakfast!
