Vegan fruit bread – juicy and without sugar

Although it’s not really that cold now in the “cold season”, the Advent season is nevertheless getting closer and closer. In the stores you can already buy Christmas decorations everywhere and there are also many hobby bakers who are already baking the first cookies. Whether you’re getting ready for the pre-Christmas season or not, a vegan fruit loaf just tastes amazing! It is juicy and since the fruits it contains already bring their own sweetness, it is not even necessary to add additional sugar. Here is the recipe for you:

ingredients

  • 160 g unsweetened (possibly homemade) applesauce
  • Juice of one squeezed orangeVegan fruit bread - juicy and without sugar

Dried fruit:

  • 200 g dried fig
  • 120 g dried apricots or plums (or half-and-half)
  • 80 g dried, pitted dates
  • 80 g raisins

Nuts:

  • 100 g ground nuts (almonds or hazelnuts)
  • 70 g hazelnuts (or also almonds)
  • 70 g walnuts
  • 100 g wholemeal spelt flour (best freshly ground with a
    Salzburg grain mill
    )
  • Cinnamon and/or gingerbread spice

preparation

First, chop all the dried fruit and mix with the orange juice and applesauce. The mixture should now infuse for about half an hour. Preheat the oven to 150°C top/bottom heat after this half hour.

Now halve the whole walnuts and hazelnuts (you can also quarter them). In a bowl, mix together all the ingredients – soaked dried fruit, nuts, flour and spices. Knead the dough a little more with your hands until you get a solid mass.

Grease a loaf pan with oil and pour the dough into the pan. Depending on the size of the mold, bake the vegan fruit bread in the oven for about 50 minutes. In a loaf pan with a length of 30cm and a width of 10cm, the fruit bread is very juicy after 50 minutes of baking.
