Unusual amaranth recipes

A few days ago there was a post about amaranth. Although amaranth is not a conventional grain, it can be used as such. Amaranth is gluten-free and rich in protein. Today you get two new delicious recipes that are a little more unusual.

Amaranth – pancakes with filling

Ingredients for the dough:

  • 200g amaranth flour (our Salzburger grain mills Max Spezial, MT 12 and MT 18 can also be used to grind amaranth)
  • 100g whole wheat flour
  • 0,5 liter mineral water
  • 2 tablespoons oil
  • 1 pinch of salt

For the filling you need:

  • 250g table curd
  • Fresh herbs (chives, parsley, dill, etc.)
  • Cress and/or alfalfa sprouts

This is how you prepare the stuffed amaranth pancakes:

For the filling, mix the curd cheese with a little mineral water to make it creamy. Then add the herbs and the cress or sprouts and mix everything. For the pancakes, simply mix the ingredients for the batter until homogeneous. Then bake out the pancakes, fill and roll up – ready! Add to this a fresh salad and you have an ideal summer meal.

The recipe should be enough for 4 people.

Alegria – a sweet from Mexico

Ingredients:

  • 12 tablespoons puffed amaranth
  • 4 tablespoons liquid honey
  • 2 tablespoons butter (soft)
  • To taste: Raisins, sunflower seeds or similar

And this is how easy you can prepare the treat:

Mix all ingredients together in a bowl. Provides a small, flat, angular shape. Now you should moisten your hands so that the dough does not stick to your fingers so much. Put the dough into the mold and press it to the bottom. Chill the mold in the refrigerator. When the dough has hardened a bit, it is best to cut out small pieces with a damp knife. Now you can enjoy this Mexican sweet with your afternoon coffee, for example. What is left over belongs in a cool place.
