Summer primal grain salad (vegetarian)

In this recipe we show you a refreshing, summer salad with a regional superfood – ancient grain. Primordial cereals have been cultivated for 10,000 years. It disappeared from the fields over time for efficiency reasons. The cereal is particularly popular with vegetarians and vegans, on the one hand because of the large number of minerals such as zinc, and on the other hand because of the high protein content which the ancient cereal can have. Varieties of the ancient grain such as spelt, Einkorn, emmer, etc. are therefore significantly more nutritious than conventional wheat, for example.

With these hot, summer temperatures, everyone is happy about a light and cool dish. For this reason, we now show you a recipe for a vegetarian primal salad.

Ingredients:

  • 250g spelt
  • 200g tomatoes
  • ½ cucumber
  • 1 bell bell pepper (color of your choice)
  • 1 bunch chives
  • 1 bunch parsley
  • 200g feta cheese

Dressing:

  • Half lemon
  • Olive oil
  • Salt
  • Pepper
  • Flaxseed as topping

Preparation:

For the refreshing, summery original grain salad, soak the spelt overnight in enough cold water. Then cook the cereal over low heat for about 30 minutes until soft and fully soaked. When the spelt has the desired bite, add a little butter or oil. Then leave the spelt to cool.

While the cereal is cooling, wash the vegetables. Dice the cucumber, cut the tomatoes and peppers into small pieces and then finely chop the herbs. Who wants can cut a sheep cheese into cubes.

Now mix the vegetables, herbs and feta cheese with the cooked cereal and marinate with the lemon juice, olive oil, salt and pepper. Optionally, sprinkle a few flax seeds over the salad, as they promote a nutty flavor.

The summery primal salad is best served room-warm and with a cool drink.

Of course, instead of spelt you can also use other ancient grains such as emmer.
