Simple cup cake

We at the Salzburg Grain Mills have a really simple recipe for you today: the one for a mug cake. The preparation is so simple because – as the name suggests – you only need one mug!

We now present you two ways to prepare the simple mug cake. In both cases, however, it is best to take a loaf pan with a length of 25 cm and grease it. Also, preheat the oven to 180°C.

Simple mug cake …

… vegan

ingredients

  • 2 mugs of whole grain flour (freshly ground with a
    Salzburg grain mill
    )
  • 1 package baking powder
  • 1 mug of grated nuts (for example hazelnuts)
  • ¾ mug of sugar (or an alternative such as birch sugar).
  • 1 ½ mugs of plant-based ‘milk’
  • ½ mug of oil
  • 2 tablespoons lemon juice

preparation

For the vegan mug cake you simply take a tea or coffee mug (filling capacity approx. 250-300 ml). First, add all the dry ingredients together in a bowl. Then the wet ingredients are added and everything is mixed to a homogeneous mass. Then pour the dough into the loaf pan and bake in the preheated oven for about 40-50 minutes. You can use a pin test to check if the cupcake is done.

  • 1 package baking powder
  • 1 mug of grated nuts (for example hazelnuts)
  • ¾ mug of sugar (or an alternative such as birch sugar).
  • 3 eggs
  • ½ mug of oil
  • 1 mug of sour cream

preparation

For this mug cake, just use the sour cream mug you’ll need for the recipe anyway as the measure. First, add the flour and baking powder together. In a separate bowl, beat the oil, sugar and eggs until foamy. Then add the nuts and sour cream. Now fold the flour with the baking powder into this mixture until a homogeneous mass is formed. Pour the batter into the loaf pan and bake in the preheated oven for about 40 minutes. Again, you can use a pin test to check if the cupcake is cooked through.

 

For both cakes: let cool well after baking. If you like, you can also decorate the cupcake, for example with icing sugar and walnuts.
