Light rice flour pancakes

Hello all,

And again a satisfied customer – yay! So she writes us how excited she is not to get different cereals to grind even more. Also, she’s already been busy baking and sent us the recipe from her rice flour pancakes. “The rice flour pancakes were very light and delicious“, she lets us know Here is the recipe for you:

Ingredients:

  • 1 cup rice flour
  • 3 eggs
  • 1 tsp almond extract
  • ¼ tsp salt
  • ½ cup almond drink
  • 1 tsp coconut oil
  • 1 tsp baking powder

Preparation:

Mix flour, eggs, almond drink and extract, salt and coconut oil in a bowl. Cover them – the dough should now rest for at least an hour. Then add 1 teaspoon of baking powder.

Heat a skillet over medium heat and add a little coconut oil. To make the pancakes fresh now, add the batter to the pan in batches (about a quarter cup). As soon as the little bubbles start popping and the edges are already baked, the pancakes need to be flipped.

On the rice flour pancakes you can now put whatever smiles at you! Or you can enjoy the light pancakes just like that!
