In this post we have chosen a recipe for delicious cookies with oat bran, which is really very easy to prepare and tastes good. Perhaps for the one or other afternoon coffee or as a snack in between, the cookies are excellent good.
Ingredients for delicious cookies with oat bran
- 1 cup* whole wheat flour (preferably freshly ground with your
Salzburg grain mill
; preferred grain: spelt or wheat) - 1 ½ cups oat bran (preferably sifted out yourself from the freshly ground oatmeal).
- 1 tsp baking powder
- 1 handful sesame seeds
- ½ cup ground hazelnuts
- 1 pinch of salt
- 2 handfuls of raisins or cranberries (of course, both can be omitted)
- 15 pitted soft dates
- juice of ½ lemon
- 1 cup milk or vegetable drink
*Filling quantity approx. 300 ml
preparation
First preheat the oven to 180°C top and bottom heat. Then add the dry ingredients (whole wheat flour, oat bran, baking powder, sesame seeds, hazelnuts, salt) together in a bowl. In a separate taller container, puree the dates with the lemon juice and milk/vegetable drink. Then knead all the ingredients together (now also add the raisins or cranberries) until you get a homogeneous cookie dough.
Now form the cookies (about 1 cm thick) and place them on a baking tray lined with baking paper until all the dough is used up. Now bake the delicious cookies with oat bran for about 10 minutes and then let cool. Ready!
