  1. Beat the egg whites until stiff, slowly adding the powdered sugar and vanilla sugar. Set some of the mixture aside for the icing (approx. 3 tbsp).
  2. Carefully fold in the cinnamon and ground almonds until a malleable dough forms.
  3. Roll out the dough to a thickness of approx. 1 cm on a surface dusted with powdered sugar.
  4. Cut out stars and place on a baking tray lined with baking paper.
  5. Brush the stars with the glaze set aside.
  6. Bake at 120 °C fan oven for approx. 15 minutes. The cinnamon stars should be firm on the outside but still moist on the inside.
