Apple pie: A classic with Salzburg flair
When the days get shorter, there is hardly anything better than baking a juicy apple pie. With the right ingredients, a pinch of love and a handful of freshly ground flour with a Salzburg grain mill, you can conjure up the perfect cake that tastes of childhood, home and coziness. Here you will find a simple recipe that is guaranteed to succeed.
Ingredients for one apple pie (springform pan Ø 26 cm):
For the dough:
- 250 g wheat flour or spelt flour (preferably freshly ground with a Salzburg grain mill)
- 150 g butter (cold, in pieces)
- 100 g sugar
- 1 egg (size M)
- 1 pinch of salt
For the filling:
- 4-5 apples (tart varieties such as Boskoop or Elstar)
- Juice of half a lemon
- 50 g sugar
- 1 teaspoon cinnamon
- 50 g raisins (optional, soaked in rum)
- 30 g ground almonds or hazelnuts
For the casting:
- 200 ml whipped cream
- 2 eggs
- 1 sachet of vanilla sugar
Step-by-step instructions:
- The shortcrust pastry:
- Place the flour, butter, sugar, egg and salt in a bowl and knead quickly with your hands to form a smooth dough. Important: Do not knead for too long so that the dough remains crumbly.
- Wrap the dough in cling film and leave to rest in the fridge for at least 30 minutes.
- Prepare the apples:
- Peel and core the apples and cut into thin slices or small pieces.
- Sprinkle with lemon juice to prevent them from browning.
- Mix the sugar and cinnamon and (if desired) the pickled raisins and ground nuts into the apples.
- Roll out the dough:
- Take the dough out of the fridge and roll it out on a floured work surface.
- Grease a springform pan and place the pastry in it. Form a rim about 2 cm high.
- Prick the base with a fork and sprinkle with the ground almonds or nuts (they absorb the moisture from the apples).
- Filling and baking:
- Place the prepared apples on the dough and spread evenly.
- Preheat the oven to 180 °C (top/bottom heat).
- Pre-bake the cake for about 20 minutes.
- The casting:
- While the cake is in the oven, whisk together the cream, eggs and vanilla sugar.
- After 20 minutes, remove the cake from the oven and pour the icing evenly over the apples.
- Bake the cake for a further 30-40 minutes until the icing has set and the cake is golden brown.
- Leave to cool and enjoy: Remove the cake from the oven and leave to cool in the tin. Serve lukewarm with a dollop of cream or a scoop of vanilla ice cream – a real treat!
Tips for the perfect apple pie:
- Freshly ground flour from a Salzburg grain mill provides an incomparably nutty aroma.
- For a crunchy touch: add a few flaked almonds or sprinkles to the cake before baking.
