Bread, figs and visions – Christian and his way back to the origins
Peru is known for its impressive landscapes, ancient cultures and culinary highlights such as ceviche. But off the beaten tourist track, there is someone who is less interested in this and all the more interested in sprouted wheat, dried figs and good bread: Christian Vera. With a hand mill from Salzburg, a lot of newly acquired knowledge in Europe and a good dose of optimism, he wants to combine traditional craftsmanship and modern visions back home.

Christian was born and raised in Lima. After studying communication sciences, he could have easily stayed in the media sector. But no, that would have been too easy. Instead, he was gripped by curiosity: what makes food and bread valuable?
Why does bread taste different in Austria/Europe than in Peru? What happens when you combine old grain varieties, sunshine and manual labor?
Christian began his journey from Peru to Europe with many questions. Interesting meetings, congresses and exchanges of experience with agricultural experts and nutrition professionals were on the agenda. Christian was also looking for a suitable device to grind his cultivated grain. During an expert discussion, Christian also received information about Salzburg grain mills and their value for the first time.
Christian contacted us a few weeks ago with his desire for a suitable mill and explained the requirements and working conditions: To carefully grind the old wheat varieties with a hand mill and bake bread in centuries-old sun ovens.
Back to the Siguas Valley – in the south of Peru
In the so-called Siguas Valley, the climate is dry, the landscape stony and the sun shines reliably. There, Christian cultivates ancient fig trees and grows Mediterranean and old grain varieties that are perfectly adapted to these conditions.
Bread – more than just a staple food
For Christian, bread is not just food, but a kind of cultural legacy. He makes wholemeal bread on his farm from wheat that has been sprouted and dried in the open air.
Without electricity – but for a few weeks now with flour from a hand-operated Salzburg grain mill.
The special thing about it is that sprouted wheat contains more vitamins and enzymes and is easier to digest. Christian uses it to make his very special fig bread, which is called “Sapiens bread”. Christian is also philosophical about it: because when you bake bread, you often think a little further ahead – in terms of origin, craftsmanship and sustainability.

Christian loves the combination of tradition and technology – as long as it remains mechanical. On his farm, the grain is ground by hand. This has several advantages: no power consumption, no heat development, but plenty of feeling for the grain. The MH6 proved to be an efficient mill after just a short time, delivering good results even in the high humidity in Lima or the dry heat in Arequipa.
Between figs, research and Facebook
Despite his rural work, Christian is well connected. He regularly attends events and keeps in touch with local bakers, organic farmers and scientists. He is constantly reporting on old varieties such as Laufener Landweizen or urban garden projects. He combines his love of the German language with his mission: to raise awareness of healthy, regional and artisan food – in Peru as well as here in Europe.
His vision: people – especially in Peru – should once again know their food and how it is produced – and ideally grind and bake it themselves.
