Vollkorn-Mohnnudeln

Mmmh .. poppy seed noodles – who of you knows this tempting delicacy? Poppy seed noodles are one traditional dessert from the Austrian and Bohemian cuisine. The preparation steps are not difficult at all, but honestly it still takes a little while before you can enjoy the finished wholemeal poppy seed noodles. But we promise you: it’s worth it!

Ingredients for the potato doughVollkorn-Mohnnudeln

  • 500 g potatoes (waxy)
  • 175 g whole wheat flour (spelled or wheat; fresh and finely ground with your Salzburg flour mill )
  • a pinch of salt

Ingredients for the poppy seed butter

  • 50 g butter or margarine
  • 4 tbsp poppy seeds
  • 1 tbsp sugar (or an alternative sweetener such as date or birch sugar)

Preparation of the wholemeal poppy seed noodles

First peel the potatoes and cut them into pieces. Then boil them in a saucepan with water until they are through.

Then finely mash or mash the potatoes and let cool down a little. (Not for too long, however, but in such a way that they are no longer too hot to knead into a dough.) Meanwhile, grind the wholemeal flour fresh. Now add the flour and a little salt to the potatoes and knead into a dough. Now chill the potato dough for about 30 minutes. Vollkorn-Mohnnudeln

Then put a saucepan with water and bring to a boil. In the meantime, remove part of the dough and form a roll (diameter approx. 3 cm). Cut off 2-3 cm pieces from the roll (see picture) and form pasta.

Now cook the noodles in the water until they float on top. Melt the butter or margarine in another saucepan and add the poppy seeds and sugar. Roll the cooked pasta in the poppy seed butter. You can also put the poppy seed butter over the noodles on the plate / in the bowl.
