Since a balanced and wholesome diet is close to our hearts, we have a great dish for you today: Spelt and sesame patties with seasonal vegetables. The spelt cereal that you freshly grind for your spelt-sesame patties is not only rich in vitamins and minerals. Since you are processing the whole grain, there is also fiber in your dish today. Sesame also brings necessary nutrients: unsaturated fatty acids are contained in a high proportion, as well as the quantity element calcium. But also magnesium and other minerals are found in sesame.
ingredients
- 250 g spelt meal (freshly ground with the coarse setting of your Salzburger grain mill)
- 4 tablespoons sesame seeds
- 300 ml vegetable broth
- 6 tablespoons breadcrumbs
- 2 eggs
- Salt and pepper (amount to taste)
- 2 tsp paprika powder
- Rapeseed oil for frying
preparation
First grind the spelt fresh, then put it in a bowl together with the vegetable broth and let it swell for about 2.5 hours.
Then mix the spelt meal with the other ingredients. Depending on how firm the dough is, more breadcrumbs might be needed. Then form fritters – they should not fall apart – and heat the pan with the canola oil.
Fry the spelt-sesame fritters for a few minutes and serve fresh.
The patties combine very well with vegetables. Since we place great emphasis on seasonality, we also have a few ideas for you on how to prepare vegetables that are now growing or still in storage in April.
Wild garlic pesto, cooked asparagus, oven vegetables with parsnips, potatoes and carrots, or a celeriac puree could be a tasty accompaniment to your roasts.
