we showed you how to make your own Sourdough your own sourdough. So you can of course bake a bread, today we have a recipe for you. In Cilli Reisinger’s bread baking book we discovered a recipe for brown bread with sourdough. So if you have already prepared a sourdough, then nothing stands in the way of baking.
Ingredients for the predough
- 200 g sourdough
- 200 g wheat flour
- 20 g yeast
- ~ 250 ml water
It is best to prepare the pre-dough the evening before the baking day. To do this, mix all the ingredients in a bowl. Cover them and leave them in a warm place overnight.
Ingredients for the brown bread
- 1250 g rye flour
- 1 tablespoon salt
- 2 tablespoons bread spice
- 2 tablespoons sesame
- ~ 600 ml water
preparation
On the day of baking, put the pre-dough and the ingredients for the brown bread together in a bowl and knead it into a dough. This should now go for about an hour. Then form two loaves of bread from the dough, place them in bread baskets lined with cloths and let them rise again a little until small cracks appear in the dough.
While the dough is rising, you can preheat the oven to 220°C. Put in the brown bread and bake until colored. Then turn the temperature down to 180°C and finish baking. The baking time is about 75 minutes.
Since we didn’t want to change Cilli Reisinger’s recipe, we’ll let you know this way: of course you can also use whole wheat flours! Be aware, however, that you will then need a little more water.
Once your delicious brown bread with sourdough is baked, let it cool. Good luck with the baking and enjoy!
