Coconut macaroons from Rudolfshausen Castle

Now Christmas is very soon, but maybe one or the other still wants to bake some Christmas cookies? Since the coconut macaroons are vegan, oil-free and gluten-free, they are digestible for many. Just give them a try!

Coconut macaroons from Rudolfshausen Castle

For one tray you need:

  • 2 fresh coconuts (preferably organic quality)
  • Juice from half a lemon
  • 3 tablespoons sugar or rice syrup
  • 1 weak tablespoon bourbon vanilla ground
  • 1 heaped tablespoon psyllium husks
  • Some water for soaking the psyllium husks
  • 125 g rice flour (purchased or self-ground)

Here’s how it works:

First open the fresh coconuts (press in at the eyes with a screwdriver) and let the coconut water run out into a glass or small jug. Next, crack the coconuts open broadside on a thick wooden board – be sure to wear thick gloves when doing this, otherwise you can hurt yourself severely – and remove the inner flesh with a spoon (if the coconuts are young, this is easy, but if the coconuts are old, it is a bit difficult. Be careful not to hurt yourself on the shell).

Now add the coconut pulp to the container of a high-powered blender, along with 2 cups of coconut water, lemon juice, bourbon vanilla, and the sweetener (sugar or rice syrup). Mix everything well until a creamy mass is formed. Pour this mixture into a large bowl.

Now soak the psyllium husks in the water and leave them for approx. 5 min. sources. Then add the psyllium husks and rice flour to the mixture and mix well.

Now you need a baking tray lined with baking paper. Furthermore, you will need a small bowl of lukewarm water in which to dip the spoon and also your hands repeatedly so that the macaroon mixture does not stick to the spoon or your hands. Now form macaroons with a small spoon and place them on the baking paper. Then slide the tray into the oven of your stove.

Then bake the macaroons in the oven for about 30 min. at medium heat or an automatic program of your oven. Then let the macaroons cool. Only when they are completely cooled, put the macaroons in a tin and refrigerate (not in the refrigerator, but in the basement or attic of your house, for example).
