Celiac disease is a gluten intolerance that is chronic and caused by the consumption of foods containing gluten. Gluten, or gluten protein, is a mixture of proteins found in various cereal seeds. When a sufferer eats meals that contain gluten, the lining of the small intestine becomes inflamed and subsequently damaged. The mucosa of the small intestine is then no longer able to absorb nutrients. Consequences that can occur are not only serious digestive disorders but also weight loss and fatigue.
Grains that contain gluten and should therefore be avoided are wheat, barley, oats, rye, spelt, green spelt, emmer, kamut, couscous and bulgur. The intolerance in celiac disease sufferers can vary in severity. Sometimes even just a tiny crumb of bread causes great discomfort.
People suffering from this gluten intolerance can only follow a lifelong gluten-free diet. For many, this forces a significant change in diet.
A great help for sufferers is that nowadays you can already buy gluten-free products, not only in health food stores, but also in supermarkets. Unfortunately, ready-made products are not as high quality as home-cooked and home-baked. There are also enough cereals that do not contain gluten. These include: Rice, corn, lentils, soy, beans, buckwheat, chickpeas, millet, amaranth and quinoa.
