If breadcrumbs (or here actually rather “breadcrumbs”) are used as an ingredient in a fresh loaf, they can bind water and make the freshly baked bread last longer. They also bring a deliciously powerful taste.

That’s why today we have the recipe for a rustic breadcrumb grain bread for you. We wish you good luck with your baking!

Ingredients for the breadcrumbs grain bread

  • 420 g wholemeal spelt flour (with a

  • 70 g homemade breadcrumbs (

  • 350 g water
  • 5 g yeast
  • 6 g salt
  • 1 tablespoon bread spice
  • 75 g linseed (crushed)
  • 30 g pumpkin seeds (chopped)
  • 25 g oatmeal

preparation

First, mix the flour, breadcrumbs, yeast, salt and water and knead for a few minutes. Then add the remaining ingredients, that is, the bread spice, flax seeds, pumpkin seeds and oatmeal. Once again, the dough is kneaded briefly. Then place the bread dough in a bowl and let it rise for about 1.5 hours.

Now grease a loaf pan with oil, put the dough in the pan and let it rise again. When the bread dough has almost doubled in volume, you can bake it. Heat the oven to 240° and bake for about an hour.

Once your breadcrumb grain bread is done baking, you should still let it cool until you cut it. After that, you can enjoy it at your leisure!
