June is the start of the blueberry season, so of course it’s a good time to bake something delicious. Today we have a recipe for surprisingly simple blueberry muffins for you. In no time they are ready baked and taste delicious!
Dry ingredients
- 250 g wholemeal flour (freshly ground with your
Salzburg grain mill
; works very well with spelt or whole wheat flour). - 2 tsp baking powder
- 100 g sugar (or an alternative such as date or birch sugar)
- 180 g blueberries*
- a pinch each of salt, cinnamon, vanilla
Wet ingredients
- 250 ml milk or vegetable drink (e.g. soy drink)
- 1 tsp apple cider vinegar
- 4 tablespoons yogurt or a vegetable yogurt
- 70 ml oil
Preparation of blueberry muffins – surprisingly simple
Preheat the oven to 180°C convection oven. In a taller container, mix the soy drink with the apple cider vinegar and let stand. Flour the blueberries. In a separate bowl, mix the dry ingredients. Then add the liquid ingredients to the dry ingredients and mix. Then add the blueberries to the batter and fold in.
For the muffin tins, either use silicone or grease them. Fill the molds with ¾ of the dough each. Bake the blueberry muffins for about 20-25 minutes. Then let cool a little and enjoy!

*If you are making the muffins away from blueberry season, then of course you can use frozen ones. Just let them thaw a bit beforehand.
