Wholemeal spelt pasta – even without a pasta machine

Have you ever made pasta yourself? This also works like clockwork with the self-ground flour from our Salzburg grain mills! One of our customers has already tried it out and shared the “standard pasta recipe” with us.

Fresh, home-made pasta has a lot going for it and, unlike store-bought pasta, only has a relatively short cooking time. What also makes homemade pasta special is that you can vary the recipe to suit your mood: you can color the pasta with beetroot or spinach, for example. You can also change the taste a little and add a bit of variety.

Wholemeal spelt pasta

If you are also keen to experiment and like to take your time, then we have a wholemeal spelt pasta recipe for you that you can use as the basis for your “culinary experiments”:

Ingredients:

  • (to each) 100 g wholemeal spelt flour (ground as finely as possible with our Salzburg grain mills; the meal can also be left in the flour and processed)
  • (comes) 1 egg
  • Water at your discretion (approx. 1 tbsp.)

This is how it works:

Depending on how much pasta you want to make, you can also use 300 g wholemeal spelt flour and 3 eggs, for example. Add the two ingredients together. If you add water, make sure you use less at first. The dough should then be kneaded into a smooth, homogeneous mass. Leave it to rest for a while afterwards.

If you have a pasta machine at home, use it, but note that the pasta should not be too thin. If this is the case, the noodles may tear and you will only have small “noodle shreds”. Ribbon noodles are advantageous as they are more “stable” due to their width.

If you don’t have a pasta machine, it’s best to roll out the dough with a rolling pin. Now you can cut strips approx. 1.5 cm wide with a knife or pizza cutter. If you are a little more daring, you can also cut thinner strips.

Now bring water (with a little salt) to the boil in a pan. The homemade wholemeal spelt pasta is cooked quite quickly – in about 6 minutes. But it’s better to check for yourself before you take the noodles out of the water to make sure they are really cooked through.

Of course, there are no limits to the sauce you can use to enjoy your wholemeal spelt pasta.
