Recipe for wholegrain waffles with warm berries

Ingredients:

For the waffles:

  • 1 1/2 cups wholemeal flour
  • 1/2 cup rolled oats
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons sugar or honey
  • 1 3/4 cups milk (or a plant-based alternative)
  • 1/3 cup vegetable oil or melted butter
  • 2 large eggs

  • A dash of lemon juice

Preparation:

  1. Prepare the waffle batter:
    • Mix the wholemeal flour, oats, baking powder, salt and sugar thoroughly in a large bowl.
    • In another bowl, whisk together the milk, oil or melted butter, eggs and vanilla extract.
    • Add the wet ingredients to the dry ingredients and mix until everything is well combined, but do not stir for too long.
  2. Bake waffles:
    • Preheat your waffle iron and grease it lightly.
    • Pour enough batter onto the waffle iron to cover the waffle plates and close the iron.
    • Bake the waffles until they are golden brown and crispy, this usually takes 3-5 minutes per waffle.
  3. Prepare the warm berry topping:
    • While the waffles are baking, put the berries, sugar or honey, cinnamon and lemon juice in a small saucepan.
    • Heat the mixture over a medium heat until the berries soften and release their juice. This takes about 5-10 minutes.
  4. Serve:
    • Serve the warm waffles with the warm berry topping. Add a dollop of yogurt or whipped cream if required.
