Recipe for buckwheat loafs
We received this old recipe from a pioneer of wholefood cooking.
Ingredients:
- 150 g buckwheat,
- 0.3 l water,
- 1 small onion
Finely chopped onion, - 2 juniper berries,
- 1 small bay leaf
bay leaf, - 2 tablespoons soy flour,
- 2 cloves of garlic,
- Herbal salt,
- 1 teaspoon marjoram,
- Curry,
- 1 egg,
- 1 tablespoon wholemeal flour,
- Parsley green,
- Wholemeal breadcrumbs for turning,
- Fat for frying
Preparation:
Simmer the buckwheat, chopped onion, bay leaf and juniper berries over a low heat for approx. 5 mins. Add all the remaining ingredients to the cooked buckwheat, knead well and season to taste. Shape into small patties, coat in wholemeal breadcrumbs and fry in a little coconut oil on both sides until golden brown. Serve with an onion sauce or steamed leek.
