Recipe for buckwheat loafs

We received this old recipe from a pioneer of wholefood cooking.

Ingredients:

  • 150 g buckwheat,
  • 0.3 l water,
  • 1 small onion
    Finely chopped onion,
  • 2 juniper berries,
  • 1 small bay leaf
    bay leaf,
  • 2 tablespoons soy flour,
  • 2 cloves of garlic,
  • Herbal salt,
  • 1 teaspoon marjoram,
  • Curry,
  • 1 egg,
  • 1 tablespoon wholemeal flour,
  • Parsley green,
  • Wholemeal breadcrumbs for turning,
  • Fat for frying

Preparation:

Simmer the buckwheat, chopped onion, bay leaf and juniper berries over a low heat for approx. 5 mins. Add all the remaining ingredients to the cooked buckwheat, knead well and season to taste. Shape into small patties, coat in wholemeal breadcrumbs and fry in a little coconut oil on both sides until golden brown. Serve with an onion sauce or steamed leek.
