Recipe for sweet chestnut cake according to Hildegard von Bingen
For the dough:
- 250 g spelt flour, finely ground
- 1 egg
- 125 g butter
- 75 g sugar
For the coating:
- 400 g sweet chestnuts
- 150 g butter
- 150 g sugar
- 1 pinch of cinnamon
- 3 eggs
- 1 tablespoon rum
Preparation:
- Knead the ingredients for the dough, flour, egg, butter and sugar well and roll out, line a round cake tin approx. 30 cm in size with it.
- Peel the chestnuts, boil until soft and pass through a sieve.
- The ingredients for the topping: Beat the butter, sugar and eggs until fluffy. Mix the cold chestnut puree with the rum. Pour the mixture into the lined cake tin.
- Bake at 175 – 200 degrees for approx. 1 hour.
