Why millet?
Millet is a real superfood! The gluten-free grain is full of important minerals such as iron, magnesium and silicon, which are particularly good for skin, hair and nails. With its mild, nutty taste, millet goes perfectly with sweet and savory dishes. Particularly exciting: in combination with raspberries, the grain becomes a dessert that simply delights everyone – from young to old.
Ingredients (serves 4):
- For the millet dumplings:
- 150 g millet
- 500 ml milk (alternatively: plant milk)
- 2 tbsp butter or margarine
- 2 tbsp sugar (or honey)
- 1 sachet of vanilla sugar
- 2 eggs
- 50 g ground almonds
- 1 pinch of salt
- For the hot raspberries:
- 300 g raspberries (fresh or frozen)
- 2 tablespoons sugar
- 1 squeeze of lemon juice
- For baking:
- Butter for the mold
- Powdered sugar for sprinkling
Preparation:
- Prepare the millet:
Bring the milk to the boil in a pan, add the millet and a pinch of salt. Leave to soak for about 20 minutes on a low heat, stirring occasionally, until the milk is completely absorbed. Then leave to cool. - Prepare the dumpling dough:
Beat the butter, sugar and vanilla sugar until fluffy. Gradually stir in the eggs. Add the cooled millet and ground almonds and mix well. - Form dumplings:
Using two tablespoons, form small dumplings from the mixture and place them in a buttered baking dish. - Bake:
Preheat the oven to 180 °C (top/bottom heat). Bake the millet dumplings for about 20-25 minutes until golden brown. - Hot raspberries:
While the dumplings are in the oven, heat the raspberries with sugar and a dash of lemon juice in a small pan. Simmer gently until a fruity sauce is formed. - To serve:
Dust the finished millet dumplings with powdered sugar and serve with the hot raspberries. Tip: A dollop of whipped cream or a scoop of vanilla ice cream makes the dessert even more irresistible.
