This recipe for rice patties with tomato sauce and an aromatic chard side dish is a feast for the senses. Ingredients
Rice patties:
280 g brown rice
560 g water
120 g mushrooms
100 g leek
100 g carrots
1 teaspoon whole salt
1/teaspoon Vitam
Tomato sauce:
100 g onion
30 g extra virgin olive oil or sunflower oil
250 g fully ripe tomatoes
1 heaped tbsp fresh basil
½ tsp whole salt, white pepper, vitam
2 cloves of garlic
1 tbsp tomato puree
1 tsp maple syrup
1 ½ dl vegetable stock
Beer batter:
150 g whole wheat flour, fine
7 cl milk
7 cl beer
2 egg yolks
2 beaten egg whites
3 tbsp water
½ tsp whole salt
250 g non-hydrogenated vegetable fat for baking
Side dishes:
800 g chard (or spinach leaves)
40 g raisins
50 g pignoli or almonds
30 g non-hydrogenated vegetable margarine
40 g onion
Full salt, a little garlic, grated nutmeg
Preparation
Rice patties:
Boil brown rice in water at a ratio of 1:1 for ½ hour and leave to steam. Do not add salt!
Boil the finely diced vegetables in half a liter of salted water and strain. Note: keep the vegetable stock for the tomato sauce.
Mix 2/3 of the rice with the diced vegetables, roughly puree the remaining third in a blender and then add.
Season to taste, shape into rolls and leave to cool. Bake in slices. Tomato sauce:
Sauté the finely chopped onion in olive oil. Sauté briefly with tomato purée and quartered tomatoes. Add the vegetable stock and season with spices and fresh herbs. Side dish:
Soak the raisins in 125 ml water. Heat the butter and fry the pignoli in it, add the chopped onions and brown. Briefly overcook the chard, rinse with cold water and season mildly. Finally, add the raisins and serve with the baked rice patties as soon as it is hot.
