Berti’s fresh blueberry pancakes
Hello and greetings, your little mouse Berti is back again! On my last trip through summery Austria, I came across some fresh blueberries. Anyone who knows me knows that I love to eat, cook and bake. So this time I took the opportunity to pick up a basket full of blueberries. They turned into a wonderful, sweet summer dish – blueberry tarts! Blueberries taste wonderfully sweet and fresh, especially in summer when they are available everywhere. Here is the recipe for you:
Ingredients
- 400g blueberries
- 150g spelt flour
- 4 eggs (separate)
- 150 ml milk (you can also use soy milk)
- 3 tablespoons birch sugar
- 1 packet of vanilla sugar
- 1 shot of mineral water
- (a shot of rum)
- Butter for frying
- Powdered sugar
Preparation
First separate the eggs. Whisk the egg whites with a pinch of salt until firm. In the meantime, chill the beaten egg whites in the fridge. Then beat the egg yolks, sugar and vanilla sugar into a creamy mixture. Next, add the liquids, i.e. milk and a dash of mineral water. Finally, the spelt flour is added to create a thick batter. You may need to add a little more milk or flour to achieve a homogeneous mixture. Finally, fold in the beaten egg whites and blueberries. If you like, you can also add a small dash of rum for flavor. Now heat the butter in a pan. To finish the blueberry patties, ladle the batter into the pan and fry the patties. Because I, Berti, am such a sweet tooth, I sprinkled some powdered sugar over my fresh blueberry patties and added a dollop of vanilla ice cream. I can tell you: it was really good!
