Even though the wild garlic season has been going on for a while, it’s not over yet. Everywhere at the moment not only the trees and bushes are blooming, in the right places you can also find a lot of wild garlic.
Besides, Easter is just around the corner. A fresh, hearty wild garlic bread would be a great extra at the breakfast table or as a snack in between. With this recipe, you can make wild garlic bread in just a short time and with little effort, which tastes good to anyone who likes it a little heartier and spicier.
This is what you need for your wild garlic bread:
- 200 g wholemeal spelt flour (with the
Salzburg grain mill
freshly ground) - 300 g spelt flour (you can also sift out your own ground flour, for example)
- a handful of fresh wild garlic
- 300 ml lukewarm water
- 20 g yeast
- 1 tablespoon salt
- 1 tablespoon bread spice
- Seeds/seeds for sprinkling
And it’s as simple as that:
First dissolve the yeast in 80 ml of water and let it rise for 10 min. Meanwhile, you can wash and chop the wild garlic. Then mix the yeast with the other ingredients and the wild garlic and knead into a dough. To make sure the dough is not too runny or too firm, you may need a little more flour or water.
Then put the dough in a greased loaf pan, sprinkle with pumpkin seeds or sesame seeds, for example, and let rise for about 20 minutes.
Bake the wild garlic bread first at 215°C for 15 minutes, then turn down and finish baking at 190°C for 50 minutes. Let cool and enjoy.
